Then I went to the store for fresh blackberries to add to my yogurt and flax seed breakfast.
Only I got sidetracked by the beautiful Chanterelles.
So I bought some chanterelles, some mixed wild mushrooms, and some Grayson cheese.
Then I got sidetracked by the smoked salmon.
I came home, and got sidetracked by the garden. I picked some thyme, sage, gralic chives, and regular chives.
I sauteed the mushrooms in half olive oil, half butter with a smashed clove of garlic, thyme, and salt and pepper. Pulled them out of the pan. Added my eggs, the chives and about a 1/4 of a giant leaf of sage, piled in the mushrooms, salmon, and grayson, and wished it was late enough in the day for a glass of Willamette Valley Pinot Noir, or Red Burgundy. Nothing would have been better.
This was the most amazing omlette ever. Too bad I couldnt wait to eat it, or the photo would have been better (i.e. no smudge on the side etc). I can't wait to make another one for dinner ASAP so I can have that Pinot Noir. YUM
